It has been raining for as long as I can remember, so for my contribution I wanted to make something cheerful and colourful!
This salad is so simple to prepare, and I especially love that it uses up any vegetables that we have lying around.
I made this quickly last night and it’s the kind of dish that will taste just as good, if not better, after a few days.
As we have a few young nephews I wanted to include plenty of vegetables, but nothing too adventurous today.
You will notice from the recipe below that I don’t tend to use precise measurements but add things here and there until they taste how I want them to.
Feel free to experiment with other vegetables, different grains and add herbs or spices if you like – I’m sure cumin and butternut squash would be a great combination for winter…

Cous cous salad with vegetables
Serves at least 6 as a side dish, fewer if a meal on its own
1 red pepper, diced
1/2 a red onion, diced
2 courgettes, cut into small pieces as desired
2 large handfuls of raisins/sultanas – apricots would also work, if you have them
1/2 teaspoon diced red chillis
2 cloves of garlic, minced
Large glug of olive oil
Small knobs of butter
Approx. 400g cous cous
Enough stock/ boiling water to cover cous cous
Salt and pepper to taste
Boil water/ start preparing stock.
Pour cous cous into a large bowl and add raisins. Top with one knob of butter.
Once stock/water boiled, cover cous cous and then cover the dish.
After approximately 8 minutes the cous cous will have absorbed the liquid and have doubled in size.
In a large pan heat olive oil with the second knob of butter. Once the butter has melted, add the red onion and fry for a few minutes.
Add the other vegetables, minced garlic and chillis and continue to cook for a further 10 minutes on a medium heat.
In the meantime, once the cous cous has fully absorbed the liquid, use a fork to separate the grains.
Once the vegetables have cooked through, but still retain some bite, season to taste.
Add the vegetables to the bowl of cous cous and stir to combine.
